Chef Michael’s Recipe of the Week: Caesar Dressing
Students love Chef Michael’s Caesar salad! Now students can make his Caesar dressing at home. A recipe for croutons is also included, so add a handful or two to your salad! Remember to wash your hands before and after cooking. Enjoy!
Caesar Dressing
- 1/2 clove garlic finely chopped
- 1 tsp Dijon
- 1 tsp Worcestershire
- juice 1/2 large lemon
- 2 tblsp finely grated fresh Parmesan
- 1 oz olive oil
- 3 oz mayonnaise
Combine all ingredients. It is okay to add a bit more of any ingredient to adjust for personal taste.
Croutons
Cut baguettes, sliced bread or buns into 1 inch cubes, roll in olive oil, sprinkle black pepper and salt. Bake in a 240 degree oven for 25 minutes or until crunchy and dry.
