Recipe of the Week: Aimee’s Ricotta Toast

This week, one of the kitchen’s super volunteers shares a simple recipe that packs a flavor punch:  ricotta toast.  It’s perfect for those days when you don’t want to cook but still want something delicious to eat.  Or you can kick it up a notch and make your own bread.  Remember to wash your hands!

Aimee’s Ricotta Toast

  • ricotta cheese
  • baguette, sliced and toasted
  • balsamic glaze
  • Maldon salt and pepper to taste
  • Choose your own adventure optional add-ons:  fresh chopped basil, sliced tomatoes, sliced strawberries, sliced peaches, peas, and mint – let your tastes buds guide you!

Smear a healthy dollop of ricotta cheese on a slice of toasted baguette.  Drizzle balsamic glaze over the cheese.  Top with optional add-ons, but don’t forget to sprinkle Maldon salt on top.  Enjoy!
