Chef Michael’s Recipe of the Week: Smores Pie

Do you know what we’ve been missing in the Kitchen Recipes Series?  Dessert!  So here it is:  Chef Michael’s Smores Pie!  Remember to wash your hands!

Smores Pie

  • 2 1/2 cups graham cracker crumbs
  • 4 cups marshmallow
  • 2 1/4 cups cream
  • 1 cup semisweet chocolate chips
  • 1/4 cup milk
  • 1/2 cup powdered sugar
  • 3/4 cups butter

Crust:  combine graham crackers and melted butter in a bowl.  Spread out on a sheet pan.  If you want to make a pie, spread out in a pie tin (there should be enough crust to fill 2 pie tins).  Bake in an oven at 355 degrees for 10 minutes.  Let cool for at least 30 minutes.

Chocolate layer:  in a saucepot over medium-low heat combine chocolate chips, 2 cups marshmallows and 1/4 cups of cream.  Stir until ingredients are melted together then add 1/4 cups of milk.  Turn off heat and stir until everything is combined.  Set aside to cool for at least 15 minutes.

Combine 1 cup cream and 1/4 cups powdered sugar and whisk in a mixer until peaks form.  Fold together with chocolate mixture until there are no streaks.  Spread on top of graham cracker crust.

Crisped marshmallow cream:  place 2 cups marshmallows in an ovenproof pan and place under broiler until marshmallows brown on top.  In a mixer whisk together 1 cup cream and 1/4 cups powdered sugar until peaks form.  Combine browned marshmallow and whipped cream mixture.  Spread on top of chocolate.

Chill in a refrigerator for at least an hour.  Enjoy!
